Why is the color of honey white?

The color of natural honey depends on the sources of nectar it was collected from, the soil and moisture, the season in which the plants and flowers were grown that provide the nutrients to the honey and how it is processed and stored for example plants grown in clay soils produce dark honeycombs (as honey collected in the tropical autumn is often dark ) more than those that grow in sandy soils.
